You had me at Tzatziki...

Seriously succulent chicken skewer recipe with our zingy Tzatziki to dip

It’s getting colder and the comfort food is calling, but don’t forget to keep your healthy snacking game strong. We have paired hot and herby chicken skewers with our cool and zingy Tzatziki. Our super simple chicken skewers are perfect for dipping and sharing. If you want to spend less time in the kitchen and more time catching up with friends this skewer recipe is simple, quick and delicious. For a vegetarian option:
This recipe also works really well with butternut squash, just cut the squash into longer thread-able thin slices, and marinade the same as the chicken recipe, you can layer them up on the skewer to create more ‘bite’.
•         2 lbs. boneless skinless chicken breasts or thighs (we prefer thighs)
•         extra virgin rapeseed oil (we use Ownsworths)
•         The juice and zest of one lemon
•         3 tbsp freshly chopped rosemary
•         2 tsp fresh chopped garlic
•         1 tsp salt
Cut the chicken into 1 ½ inch strips for skewering. In a small bowl, mix together the rapeseed oil lemon juice, crushed garlic, rosemary, salt, and lemon zest. Place the chicken pieces in a glass dish. Pour the marinade over the chicken and stir to coat. Cover and place in the refrigerator and let the chicken marinate for 20 minutes or longer if you have time for a more intense flavour. If using wooden skewers, soak them in water while the chicken is marinating. Grease the grill with rapeseed oil and heat. Skewer the chicken, evenly divided between 6-8 skewers.
Cook until golden brown and cooked through – dip them with our deliciously cool and herby Tzatziki dip!
